Menu Monday

After a bit of a break, Menu Monday is back!
We're back to planning our meals in advance and as a result, are eating more at home which I absolutely love!

Monday
*Chicken Tortilla Soup
*Chips & Guacamole
We stumbled upon the best Chicken Tortilla Soup at Costco.  It rivals my homemade crock pot version and since it requires no cooking, we're obsessed with it.  Just add some hot sauce, some avocado, some cheese, and a lime wedge, and a delicious meal is ready!

*Salad
This has to be my favorite comfort food and my favorite meal to make with VABeau.  This fact comes as little surprise since we got engaged while making this meal almost 4 years ago.  Seriously, these meatballs rival some Italian restaurant's meatballs.  I could literally eat this meal at least once a week during the Winter

Wednesday
*Refill Wednesday
Our church has started hosting Refill Wednesdays on Wednesday nights.  These events include a free meal and fellowship lead by our amazing pastor.  This week we were treated to delicious Chinese food and a great lesson on interpreting scripture.  I'll admit, I really did not want to attend this event after a long day of jury duty, but it really did what it advertised.  It refilled me and made me ready to tackle the rest of the week.

Thursday
*Presto Pesto Chicken
*Lemon Tomato Orzo
An old favorite from Rachel Ray's Look+Cook book.  It's insanely easy, requires few ingredients, and is pretty darn delicious.

Friday
*Elevation Burger
My love for Elevation Burger is never ending.  In my mind, if I cook all week long, I deserve a little take out on Friday night ;)

  1. I'm loving the idea of Refill Wednesday. I'll have to bring the idea up to my church people :)

    Also, that pesto chicken looks delicious.
